Salmon with Avocado Mayonnaise |

Realllly scrumptious salmon recipe. Ingredients:
1 tablespoon brown sugar |
2 teaspoons paprika |
1 1/2 teaspoons salt |
1/2 teaspoon ground cumin |
1/2 teaspoon chili powder |
1/2 teaspoon black pepper |
6 (8 ounce) salmon fillets |
2 tablespoons olive oil |
1 ripe avocado, peeled and cubed |
2 teaspoons fresh lemon juice |
5 tablespoons mayonnaise |
Directions:
1. In a small bowl, add the first 6 ingredients; stir to combine, then set aside. 2. Rinse the salmon fillets and pat dry. 3. Put the salmon, skin side down in a broiler pan. 4. Brush each fillet with 1 teaspoon oil. 5. Sprinkle the fillets evenly with the brown sugar mixture. 6. Broil about 5 inches from heat source for 1 1/2 to 2 minutes or until brown sugar mixture begins to carmelize. 7. Lower oven temperature to 425 degrees and bake 8-12 minutes or until fish flakes. 8. In a small bowl, mash the avocado until mostly smooth. 9. Add in the lemon juice; stir to combine. 10. Whisk in the mayonnaise until smooth. 11. Cover and chill until ready to serve. 12. Serve with the salmon fillets. |
