This is intended to be a light main course for a hot night. Tuna will also work. This comes from a goofy old cookbook called Wolf in Chef's Clothing, the Picture Cook and Drink Book for Men. All the recipes in the book are done in pictures, but I've translated them into words for you.
Ingredients:
1 (6 1/2 ounce) can salmon (or tuna)
1 tablespoon salt (or to taste)
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup chopped celery
1/2 tablespoon pepper (or to taste)
4 tablespoons mayonnaise
2 tablespoons india relish
lettuce leaf
Directions:
1. Combine salmon and salt in a large bowl.
2. Mix in green pepper, onion, celery, pepper, mayonnaise and relish.
3. Serve on a bed of lettuce.
