SALMON PUFFS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Love Estate in Sachse, Texas in 1984.
Ingredients:
8 ounces canned salmon drained
1 cup milk
1/2 cup sliced fresh mushrooms
1/4 cup green pepper chopped
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 eggs separated
Directions:
1. Combine salmon, milk, mushrooms and green pepper then bake at 375.
2. Meanwhile beat egg whites with salt until stiff.
3. Beat egg yolks then fold whites into yolks a little at a time.
4. Pour over salmon mixture and return to oven for another 20 minutes.
