good use of canned salmon. Tasty with mayo and mustard.
Ingredients:
14 3/4 oz salmon
1 onion, medium, chopped
1 t olive oil
2/3 c bread crumbs
2 large eggs
1 t mustard
1 t olive oil
Directions:
1. Saute onion in 1 T olive oil until soft. Cool slightly.
2. Beat eggs, flake in salmon, stir in mustard, 1/3 c bread crumbs, and cooked onions.
3. Form into 6 patties, coating with remaining breadcrumbs.
4. Heat remaining oil in skillet, cook patties over medium-high heat, about 5 minutes a side, until brown and crispy.
