Salmon On Spicy Greens with Grapefruit Caesar

Ingredients:
3 tablespoons hazelnuts, chopped
3 cups arugula (or mix of spicy greens including mustard and kale)
1/4 pound feta
1/2 pound (wild) salmon
2 tablespoons olive oil
1/8 tsp salt
1/8 tsp ground black pepper
Directions:
1. In a dry skillet, toast the hazelnuts over medium-high heat until lightly browned, set aside to cool slightly. Toss the mixed greens and feta with 1 to 2 tablespoons of the Grapefruit Caesar Dressing (recipe below).
2. Warm a skillet over medium-high heat. Once hot, add olive oil. Salt and pepper the salmon and cook, skin side up first, 3 minutes each side (for rare fish, longer for more done). Set finished salmon over the dressed lettuce, add hazelnuts over top.
