Salmon Loaf

This is a good way to serve salmon. Its quick, easy and tasty. I serve it with macaroni and cheese, a green salad and peas or broccoli.
Ingredients:
1 (1 large) can salmon, picked of bones
1 egg
1 cup fine breadcrumbs
1/2 teaspoon salt
1/3 cup finely chopped celery
1/3 cup finely chopped onion
1 tablespoon dried parsley flakes
1/2 cup mayonnaise (not salad dressing)
Directions:
1. Mix together all of the above ingredients and shape into a loaf like you would a meatloaf.
2. Place into a lightly greased baking dish and bake in a preheated 350 degree oven for 1 hour.
