Salmon in a Spicy Lemon Marinade |

From the Somersize Grill Instruction & Recipe Book. Ingredients:
1/4 cup olive oil |
1/4 cup dry white wine |
1/4 cup lemon juice, about 2 lemons |
1 tablespoon fresh thyme, or 1 tsp dried thyme |
1/4 teaspoon ground red pepper |
1 1/4 lbs salmon fillets |
salt, to taste |
pepper, to taste |
lemon wedge (to garnish) |
Directions:
1. In a large sealable bag combine the olive oil, white wine, lemon juice, thyme and red pepper. Put in salmon and seal bag. Refrigerate for 15 minutes or up to 4 hours. 2. Spray grill with cooking spray. Preheat grill for 5 minutes. 3. Remove salmon from bag and place on grill. Close lid and set timer for 7 minutes. 4. Serve salmon with lemon wedges. |
