Salmon & Fiddleheads

Ingredients:
2 package(s) salmon fillet thawed
2 tablespoon(s) mayonnaise
2 tablespoon(s) lemon juice
1/4 cup(s) pickle juice
1 teaspoon(s) dill fresh or dried
1 tablespoon(s) butter or margarine melted
1/4 cup(s) wild leeks or shallots finely chopped
1 cup(s) fiddleheads blanched
Directions:
1. -Set aside Salmon Fillets seasoned with salt and pepper.
2. -Combine mayonnaise, lemon juice, pickle juice, dill, butter and wild leeks or shallots.
3. -Mix until creamy smooth.
4. -Dip prepared Salmon fillets in sauce and place in cast iron skillet on med-low.
5. -Cover and cook for 5 min.
6. -Add Blanched fiddleheads to sauce and pour over salmon.
7. -Cover and cook remaining 5 min.
8. Serve hot with rice, potatoes or salad !
