Salmon Cucumber Rice

Ingredients:
2 1/2 ounces canned salmon
1/2 japanese cucumber
minced ginger
1 tablespoon cooking oil
9 ounces cooked rice
1/2 teaspoon salt
pepper
Directions:
1. Drain salmon and flake. Chop the cucumber.
2. Sauté the salmon, cucumber and ginger briefly in 1/2 tablespoon of the oil, then remove from the pan.
3. Add remaining oil to pan and sauté the rice. Return salmon mixture to the pan and season with salt and pepper.
