Ingredients:
3 english cucumbers
2 cups boursin cheese
1/3 lb smoked salmon, cut into thin strips (1/2 inch long)
Directions:
1. Slice cucumbers into 1/2 inch rounds.
2. With a melon baller, scoop out the center of each round, leaving bottom intact, to make shallow cups.
3. Using a pastry bag or spoon, fill cucumber cavities with cheese and top each with a strip of salmon.
