My dad made this recipe up with whatever he had in his cupboards and fridge... I fell in love with it and make it for a quick supper or lunch.
Ingredients:
1 can of salmon ( any that you prefer), drained
2 cups low-fat milk
1 cup frozen mixed vegetables ( or any veggies you prefer),thawed
handful of low-fat cheddar or any type of cheese you might like ( mozzarella is not recommended). it really is up to you on how much cheese you would like.
1 can (14oz) condensed cream of potato soup
Directions:
1. Add the soup and milk to a meduim saucepan and bring to a light boil, stirring constantly. Add veggies and simmer for about 5 minutes. Add cheese and salmon and cook until cheese is melted. Serve and enjoy!
2. This recipe is really flexible to what you would like to add. The base is just the can of soup, milk and cheese... rest is up to you.
