I found this recipe on a blog called Clean & Delicious with Dani Spies. It looked like a good recipe to me, because it doesn't require a trip to the grocery store, it's healthy, and it's a fast lunch (with leftovers!).
Ingredients:
2 garlic cloves, minced
2 cups quinoa, cooked
1 (15 ounce) can wild salmon
fresh basil, sliced (as much as you'd like)
half a lemon, juice and zest
half a cucumber, chopped
Directions:
1. Combine all ingredients in a bowl.
2. Enjoy!
