Salatit Batata (Tunisian Potato Salad)

Ingredients:

Directions:

  1. Cook potatoes in lightly salted boiling water until tender but still intact.
  2. Drain and return to pan.
  3. Cook over low heat until potatoes are dry, about 1 minute.
  4. Heat oil in a large, heavy skillet over medium heat until a light haze forms above it.
  5. Combine cayenne, cumin and water.
  6. Add cayenne mixture, lemon juice, caraway and salt to skillet.
  7. Cook, stirring constantly, until most of the liquid has evaporated.
  8. Remove from heat, add potatoes, and stir gently until evenly coated.
  9. Cool to room temperature before serving.
