Red and green cherries make this a festive, fruity, low calorie treat
Ingredients:
3/5 oz sugar free cherry gelatin (2 small boxes)
2 cups water, boiling
14 1/2 oz tart cherries, drained, reserve juice
60 grams maraschino cherries, green (12 cherries)
8 oz lite cool whip topping
Directions:
1. Dissolve gelatin in boiling water. Add cold water to reserved cherry juice to make 1 3/4 cups cold liquid. Stir cold liquid into gelatin until all dissolves.
2. Refrigerate until partially set, like the consistency of egg whites, about 1 hour, checking every 20 minutes.
3. Fold drained cherries into thickened gelatin. Pour into an 8 x 12 or 9 x 13 glass baking dish. Refrigerate until firm.
4. When gelatin is fully set, just before serving, spoon 12 dollops of cool whip evenly over top. Dollops may touch, but leave some of the red gelatin showing through. This can also be piped on with pressurized whipped cream. Place one green maraschino cherry in the center of each dollop of whipped cream.
