A fresh salad combining fish and vegetables
Ingredients:
300 gr unsalted codfish.
1 c cooked beans ( white, or and red ).
3 stalks celery ( leaves only), chopped.
6 leaves lettuce cut in rough pieces.
6 radish cut in 4.
2 spring onions sliced.
2 slices old bread cut in cubes.
1/2 c white whine.
2 cloves garlic shredded.
3 tbs olive oil.
salt .
for the dressing.
1/3 c olive oil.
3 tbs lemon juice.
1 ts olive pasta ( black).
1/4 ts ground cumin.
1 tbs parsley chopped.
salt and pepper to taste.
Directions:
1. Boil 1 c water with the whine and add the codfish, cook on medium heat 5 min., close the heat and cool 30 min.
2. Drain and cut in smaller pieces.
3. Sprinkle bread cubes with olive oil, garlic and salt .
4. Preheat oven to 200 C and bake cubes 10 min.
5. The dressing.
6. Put olive oil, lemon juice, olive paste, cumin and parsley in the blender and beat till smooth, add salt and pepper to taste.
7. Put vegetables in a salad plate, mix with the dressing, add beans, bread cubes and codfish, mix and serve.
