My non-salad-eating husband devoured this as his main (and only) course last night. I have no clue what to serve with this, which is unfortunate since I've decided to serve it at a luncheon for 6 ladies in two days. Read more . I'm thinking just add a great appetizer and a dessert, and I'm set.
Ingredients:
spring salad greens
boneless skinless chicken breast
kraft honey dijon vinaigrette
diced apple
goat cheese
sliced apple
candied walnuts
Directions:
1. Preheat your grill. Season chicken breast as desired (I used a general seasonings blend).
2. Grill chicken & then slice it.
3. Layer salad from the bottom up: greens, chicken goat cheese, apple slices, vinaigrette, walnuts.
4. Garnish salad with apple wedges on top.
