Imagine a nice cool salad with Caesar dressing, on top of a warm cheesy crust. Delicious! 2007 Family Circle.
Ingredients:
1 package (one 14-ounce crust) large baked pizza crust, such as boboli
7 thin slices provolone cheese (about 3 ounces)
1 cup (4 ounces) shredded mozzarella cheese
1/2 package european blend salad mix (4 cups)
1/2 cup small red onion, thinly sliced
1 large plum tomato, cored, halved lengthwise and thinly sliced
1/4 cup light caesar salad dressing
Directions:
1. Heat oven to 500 degrees.
2. Unwrap crust.
3. Arrange slices of provolone cheese in a single layer on crust; top with mozzarella cheese.
4. Place crust directly on middle oven rack.
5. Bake for 5 minutes.
6. While crust is in oven, toss salad, onion, tomato and salad dressing.
7. Remove crust from oven.
8. Immediately top with tossed salad.
9. Cut into wedges to serve.
10. Only 299 calories, 25 mg. cholesterol!
