This dish involves careful chopping and slicing, but if you have a Food processor you`ll cut the preparation time down to almost half.
Ingredients:
8 oz. fresh runner beans, cut diagonally across
salt
2 turnips, pared and thinly sliced
1/2 small white cabbage, shredded
1/2 small red cabbage, shredded
1/2 small cauliflower, cut into florets
2 red peppers, sliced thinly
2 green peppers, s;lliced thinly
5 young leeks or spring onions sliced
1 bunch radishes, slliced
4 carrots shredded
4 sticks celery, thinly sliced
4 tomatoes, cut into wedges
1 head of lettuce, shredded - i use iceberg lettuce
1/4 cucumber, thinly sliced
Directions:
1. Boil the Runner Beans in lightly salted water for 5 to 10 minutes.
2. Drain under running cold water, then set aside.
3. Arrange the prepared vegetables attractively in a serving dish or dishes.
4. Cover with plastic film and chill until ready to serve.
5. This is good served with Cottage Cheese or a selection of Cold Meats, if liked.
6. VARIATIONS
7. For added flavour, serve bowls of crumbled crispy bacon, garlic croutons or toasted sunflower seeds to sprinkle over the top of the salad.
8. There are only 150 Calories per Serving, so good for those on a Diet. Also good for those watching their 5 a Day intake of fruit and Vegetables!!
9. You could, if desired, use a Dressing of your choice.
