SAKE MARINATED SHRIMP WITH A CUCUMBER AND MANGO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Watson Estate in McKinney, Texas in 1991.
Ingredients:
2 tablespoons grated peeled fresh ginger root
1/4 cup green onions chopped green part only
2 tablespoons fresh cilantro chopped
1 teaspoon garlic minced
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/2 cup sake wine
3 tablespoons sesame oil
1 tablespoon rice wine vinegar
1 tablespoon soy sauce
1 teaspoon worcestershire sauce
shrimp
2 pounds medium shrimp peeled
1 cup julienne peeled seeded cucumbers
1 cup julienne fresh mango
drizzle of extra virgin olive oil
2 teaspoons fresh cilantro finely chopped
1/2 teaspoon salt
1/2 teaspoon ground white pepper
Directions:
1. Combine marinade ingredients and stir well then stand at room temperature 30 minutes.
2. Season shrimp with salt and pepper then toss with marinade and cover.
3. Refrigerate 30 minutes then combine cucumbers and mango.
4. Season with a drizzle of the oil, salt and white pepper then mix well and stir in cilantro.
5. Heat a medium wok over medium heat.
6. Add shrimp in batches to wok and stir fry 3 minutes.
7. Remove from heat and cool.
8. To serve place a small amount of the shrimp mixture on each serving plate.
9. Spoon some of the salad on top then garnish with chives.
