I've been working on this recipe for a very long time. Spicy oatmeal cookies brimming with choc. chips & pecans. I'm not responsible if you wake up in the middle of the night dreaming of these.
Ingredients:
1/2 cup applesauce
1/2 cup butter
1 tsp. vanilla
2 eggs
1 cup brown sugar
1 cup sugar
1/2 tsp. cinnamon
1/8 tsp. clove
1 tsp. baking soda
1 tsp. salt
2 cups flour
3 1/2 cups quick cooking oats
1/2 cup chopped pecans
1/2 cup semi-sweet chocolate chip morsels
****substitutions! - you can!!!! replace -all- of the butter with an extra 1/2c. of applesauce -or- replace the applesauce with 1c. puree pumpkin (not pumpkin pie mix, just the puree... the stuff without all the extra gunk added!) the cookies come out slightly more cakelike, and you may want to add a little more oats/flour.
Directions:
1. Cream together butter, white sugar, brown sugar, and vanilla.
2. Add in eggs and applesauce until blended.
3. Mix in Cinnamon, Clove, salt and baking soda.
4. Add flour until blended, then oats.
5. When this is all mixed, add pecans and chocolate chips.
6. Drop by the spoonful onto ungreased cookie sheets and bake at 375 F for 15 minutes.
7. GENTLY remove cookies from cookie sheets onto a rack and allow to cool for at -least- five minutes. I'm serious. I mean it. You let them cool! Arm yourself with a wooden spoon.... you might need to threaten family members, significant others, room mates and random innocent people just passing by who lose all sense of self control near these cookies.
