There's an inside joke with my boyfriend who could practically eat bacon at every meal. We ALL love BLTs, but, in my family we've traditionally eaten them in the summer, and nearly always when the corn on the cob is ripe and sweet. Read more . It's a meal we SO look forward to every summer. It's become such a thing that when one of us says A BLT sounds good , the other will counter with, But the corn's not ready, yet . So, if you ask him, this salad is called Stubborn Southerner Salad...but, for me, it's Sunsational Summer Salad! :) Either way, it's a tomato salad, with the flavors a favorite summer meal!
Ingredients:
about 2lbs firm tomatoes, chopped into at least 1/2 inch pieces(i used some yellow heirloom and cherry tomatoes, halved)
1/4-1/2lb smoked bacon, cooked crisp and crumbled
about 2 cups fresh corn, just blanched or roasted(can sub frozen, thawed, only, no need to cook it)
about 2 cups loosely packed leaf lettuce, torn
juice from 1/2 lemon
favorite season salt blend(mine is salt, pepper, garlic and onion)
for creamy green onion dressing
about 1 cup mayonnaise
1/4-1/2 cup buttermilk(to desired consistency, i liked this just a lil thicker than a usual salad dressing)
1 heaping t dijon
2 green onions, chopped(green and white)
fresh ground pepper
for ciabatta croutons
about 1/4lb ciabatta bread, cut into 1/2 inch cubes(i used whole grain ciabatta rolls , and i only used 2 rolls, total)
4t butter
2t dried dill weed(or sub about 1/4 cup fresh, chopped)
1 clove garlic, minced
Directions:
1. Place tomatoes in large bowl and drizzle with lemon juice then sprinkle with a lil of the season salt blend.
2. Toss well and set aside.
3. For Ciabatta Croutons
4. Melt butter.
5. Add dill and garlic and mix well.
6. Pour over bread cubes and toss to coat
7. Bake at 400 for about 10 minutes until golden brown
8. For Creamy Green Onion Dressing
9. Combine all ingredients and mix well.
10. To Prepare Salad
11. Drain tomatoes and add corn and lettuce to bowl of tomatoes.
12. If refrigerating and serving later, add about half of the dressing and toss well.
13. Add crumbled bacon, croutons and remaining dressing at serving
14. If serving immediately, just add the dressing and toss, then add the bacon and croutons.
