It's a recipe that my mom learned from Sylvia Reynoso Gala. It is really moist with a vanilla custard filling and mouth watering fudge frosting.
Ingredients:
2 1/4 cups sifted cake flour
2 teaspoons baking powder
1 1/4 teaspoons baking soda
1 3/4 cups sugar
3/4 cup margarine
3 large eggs
1 teaspoon vanilla
3/4 cup sifted unsweetened cocoa powder
1 1/3 cups water
1 egg yolk
1 tablespoon cornstarch
1/4 cup condensed milk
1/2 cup evaporated milk
1/4 teaspoon vanilla
frosting
2 cups evaporated milk
1 cup condensed milk
1/2 cup sifted unsweetened cocoa powder
4 tablespoons all-purpose flour
1 teaspoon vanilla
1 teaspoon baking soda
2 tablespoons butter
Directions:
1. Preheat oven to 350°F Line two 9-inch round pans.
2. 1. Mix 1 1/3 cups water, 3/4 cup unsweetened cocoa powder and vanilla. set aside.
3. 2. Cream margarine and sugar until fluffy. Add eggs one at a time until creamy. Add the dry ingredients alternately with the cocoa mixture until well blended. Pour in prepared pans and bake for 30 minutes or until done. Let cool.
4. Filling: Combine all ingredients in a double boiler and cook until thick.
5. Frosting: In a heavy bottom saucepan mix together all ingredients for the frosting except butter. Cook until thick; stir in butter.
6. To assemble: Fill layers of cake with filling. Ice decoratively with frosting.
