Ingredients:
15 oz cannelini beans, drained
1 cup onion, sliced
3 cloves garlic, sliced thin
15 oz diced tomatoes
1/2 medium bell pepper
1/2 tablespoon olive oil
1 pinch of rosemary
1 dash of salt
1/4 cup white wine, for deglazing pan
Directions:
1. Heat olive oil over medium high heat. Saute Onions and pepper, adding garlic to pan when onions are limp. Saute 1-2 minutes more.
2. Reduce heat to medium and add beans, tomatoes, herbs and salt.
3. Cook on low until mixture reduces some. Deglaze pan with wine.
