Rustic Beef Casserole (Spicy)

This is a really easy beef casserole that turned out super-tasty. I had some veg and potatoes left in the cupboard and decided to try something new. This is a complete meal that is realatively low effort. I have put 4-6 servings, I live with two guys who devoured it so you may get more from the mix! I add dried chillies to the mix but if you don't like spicy - just leave them out. I'm sure it would taste great without!! Let me know if you like it!
Ingredients:
500 g beef, cut into chunks (i used skirt but any stewing beef will do)
1 large onion, roughly chopped
5 garlic cloves, roughly chopped, slightly crushed
1/2 large courgette, large chunks
1/2 large bell pepper, large chunks
1/2-1 glass red wine
500 g new potatoes, cut in two
mixed herbs
bay leaf
salt & fresh ground pepper (to taste)
dried chili (to taste)
1 vegetable stock, cube
1 (14 ounce) can chopped tomatoes
Directions:
1. In a pan fry/seal-off the beef until nice and brown, a little bit crispy.
2. Remove beef from the pan into a large pot.
3. Add onions to the pan and fry them in the juices from the beef.
4. When the onions are getting soft, add the garlic.
5. When all the juices are gone and they are just about to burn, add onions and galic to large pot, with the beef.
6. Add to the pot: 4 large glasses of water. 1/2 to 1 large glass of red wine. stock cube. mixed herbs. salt and pepper. dried chillies. bay leaf.
7. Put the lid on the pot and simmer for 2 hours.
8. After 2 hours, add to the pot: courgette. bell pepper. chopped new potatoes. tin of chopped tomatoes.
9. Cook again for another 30 minutes or until the potatoes are cooked.
10. (Some crusty bread and a cool beer go excellently with this dish).
