I found this recipe the same way that I mostly find the ones that I post here, BROWSING THE NET !!! After I found it, I just HAD to try it and it ended up being a keeper. You can also vary the amounts of the ingredients and substitute the vegetables according to your own personal taste or preferences. Read more . You won't go wrong with this one...Enjoy !!!
Ingredients:
boiled potatoes (peeled, cubed and boiled)
boiled eggs (sliced)
boiled mixed vegetables, carrots, green peas
onion, green peppers, tomatoes (chopped)
4 oz. can of black jalapeƱo olives (sliced) drained
capers
black pepper to taste
note: the amounts of vegetables can go according to your likes.
for the dressing
mayonnaise
sour cream
lemon juice
olive oil
white or red vinegar
garlic (mashed or paste)
whisk together all the dressing ingredients and refrigerate while preparing the salad.
Directions:
1. Boil the potatoes separate from the eggs.
2. Blanch together the carrots, green peas and mixed vegetables.
3. In a large mixing bowl bring in the potatoes, the sliced eggs,
4. the blanched vegetables along with the black olives, capers and the chopped onion, peppers and tomatoes.
5. Sprinkle with black pepper and toss everything well.
6. Mix well the prepared dressing with the potato mixture.
7. Chill before serving or serve at room temperature.
