Russian Ricotta Cake

Sometimes cheese cakes tend to be abit gooey , eventhou fully baked . Don't worry about that as it will harden up once chilled .
Ingredients:
crust
3 tbsp sugar and brown sugar
3 tbsp butter softened
3/4 c ground walnuts
3/4 c plain flour and 1 tsp baking pwd
1/2 tsp nutmeg
500 to 700 g cream cheese
200 to 300 g soft white cheese like ricotta
1 c sugar
6 yolks
juice and zest of 1 large lemon
3 tbsp flour
6 egg whites
1 c heavy cream
1 c sultanas and icing sugar ( optional )
Directions:
1. Pre heat oven at 200 deg C .
2. Line a 28 cm pan .
3. Crust :
4. Pulse everything until stiff dough forms .
5. Roll out and press over base .
6. Bake for 10 mins and cool it .

8. Beat the cheese and sugar until smooth .
9. Add the yolks , juice , zest and flour
10. Beat until well combined .
11. ................
12. Beat the whites until thick and glossy .
13. Beat the cream until soft peaks form .
14. Fold into cheese .....
15. And sprinkle the sultanas ( optional ) . Stir it in .
16. ......
17. Bake them for 10 mins
18. Lower the temp to 150 deg C .
19. Continue to bake for 1 hr .
20. Leave it in the oven ....
21. Once cool , chill overnight
22. ....
23. Sprinkle icing sugar and serve COLD
