A very simple fruit dessert that can be made with fresh or frozen berries, so can be enjoyed year round!
Ingredients:
6 cups berries-frozen or fresh
3-4t white sugar
1 shot rum(i use malibu)--can sub 2tsp almond, rum or vanilla extract
1 cup flour
1 cup brown sugar
1 cup oats
1tsp cinnamon
1tsp nutmeg
1 stick butter, softened, but not melted
3oz cream cheese, softened but not melted
Directions:
1. Combine berries with rum and white sugar and toss to coat and let rest while preparing topping.
2. Combine flour, brown sugar, oats, cinnamon and nutmeg.
3. Add butter and cream cheese and mix(I use my hands) until combined. Batter will not be crumbly, rather it should hold it's shape if you press it together.
4. Pour berries into shallow glass dish, or dishes, to form about a single layer.
5. Drop batter over entire surface of berries
6. Bake at 400 for 35-45 minutes until berries are bubbly and topping is golden brown.
7. This is, of course, fantastic with vanilla ice cream or homemade whipped cream.
8. The Berry Rum liquid that forms in the bottom of the pan makes a fun shot (no traceable alcohol is present, but it's tasty! :)
