I just found this in my email box, its from Fruits & Veggies More Matters. It sure looks good. I bet Strawberries would be good in place of cherries until they come into season!
Ingredients:
dressing
1/3 cup orange juice
2 tbs olive oil
2 tbs honey
1/2 tsp salt
ground black pepper to taste
1 bag baby spinach or mixed greens
3 cups sweet cherries, pits removed
2 cups sliced english cucumber
1/2 finely diced red onion
Directions:
1. Wisk together orange juice, oil, honey, salt and pepper; set aside.
2. In a large bowl, combine salad ingredients.
3. Toss with salad dressing and serve immediately.
4. An Excellent source of vitamine C and a good source of vitamin A and fiber.
