Two types of meat and because it's made in a slow cooker it's a great choice for casual Christmas gatherings.
Ingredients:
2 lbs lean ground beef
1 1/2 lbs beef flank steak, cubed
1 medium onion, chopped
1 celery rib, chopped
29 ounces tomato sauce
29 ounces diced tomatoes, undrained
16 ounces kidney beans, rinsed and drained
15 ounces pinto beans, rinsed and drained
4 ounces green chilies
2 -3 tablespoons chili powder
3 teaspoons ground cumin
2 teaspoons salt
2 teaspoons pepper
1/2 teaspoon ground mustard
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon garlic powder
hot pepper sauce
cheese, shredded
onion, additional chopped
Directions:
1. In a large skillet, cook the ground beef, flank steak, onion, and celery over medium heat until meat is no longer pink and drain.
2. Transfer to a 6-quart slow cooker.
3. Stir in the tomato sauce, tomatoes, beans, chilies, and seasonings.
4. Cover and cook on low for 6 to 8 hours.
5. Serve with hot pepper sauce, cheese, and onion if desired.
