Roti John, essentially an omelette sandwich, is a popular Malay breakfast and snack item in Malaysia and Singapore. 'Roti' is the Hindi , Malay word for bread . During the years of British Colonial rule, all Caucasians and Westerners were affectionately referred to as 'John' in Malay, and as such, the nickname of 'Roti John' (literally 'John Bread') was derived .
Ingredients:
6 mini whole meal baguettes - halves
1 tin sardines in half quantity of tomato sauce from the can mashed with a fork or minced mutton or minced chicken
1 large white onion - chopped
2 garlic - chopped
2 green chillies - sliced
ground black pepper
3 eggs
tomato-chilli sauce
extra virgin olive oil
Directions:
1. Fry the minced mutton and chopped onions , garlic , green chillies in a skillet . Sprinkle some pepper .
2. Place into the cavity of a baguette halved lengthwise with the sauce .
3. Then briefly pan-fry the whole baguettes on the skillet by dipping into beaten egg and the spread mixture down .
4. Flip to crisp the other side .
5. Slice into several portions and serve .
