My mother gave me this recipe, but I am unsure as to where she got it from. This recipe makes a LOT of cookies. The pinkish colour is very appealing. Great for school bake sales. The not so sweet taste is also good for adults. Don't make if you are allergic to tomatoes.
Ingredients:
1 3/4 cups flour
1 1/3 cups sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon allspice
1 cup butter
1 egg
1 can tomato soup
2 1/2 cups rolled oats
1 cup raisins
Directions:
1. In a large bowl, stir together the flour, sugar, baking powder, baking soda, cinnamon and allspice.
2. Add butter, egg and soup.
3. Beat at medium speed for 2 minutes, constantly scraping sides of bowl.
4. Stir in oats and raisins.
5. Drop by teaspoon on greased baking sheets (or parchment lined sheets).
6. Bake at 350F for 9-11 minutes.
