Rosy Beet Napa Cabbage Slaw

Ingredients:
6 cups thinly sliced napa cabbage
1 1/2 cups chopped red onions
2 medium beets, grated
1 cup chopped fresh parsley
1/4 cup red wine vinegar
1/2 cup water
2 tablespoons brown sugar
1/2 teaspoon salt
1/3 cup chopped fresh dill
3 tablespoons chopped fresh chives
1/2 cup low-fat sour cream
salt & freshly ground black pepper
Directions:
1. Combine vegetables and parsley in a large bowl.
2. In a saucepan, combine vinegar, water, sugar and salt. Bring to a boil, stirring until sugar is dissolved.
3. Pour over vegetables and toss.
4. Add dill and chives and mix in well.
5. Cover and marinate overnight.
6. Stir well. Just before serving, drain off excess liquid.
7. Stir in sour cream and salt and pepper to taste.
