MAKES IT BETTER THEN YOUR REGULAR JAR SALSA
Ingredients:
4 ears of sweet yellow conr in shucks
4 poblano peppers
1 red bell pepper (small dice)
1orange bell pepper (small dice)
4 medium tomatoes (small diced)
4 cloves of garlic (minced)
2 medium white oinions (small diced)
3-6 jalapenos (minced)
1/2 bunch of cilantro (finely chopped)
1-2 limes
salt (to taste)
Directions:
1. PEEL BACK SUCKS REMOVE SILKS FROM CORN. ROAST CORN OVER OPEN FLAME APROX. (5 MIN)
2. FINISH IN OVEN 350* F FOR 15 MIN WRAPPED IN THEIR SHUCKS.
3. ROAST POBLANO PEPPRES ABOUT 5 MIN OVER OPEN FLAME
4. STEAM IN SEALED CONTAINER FOR 15 MIN
5. WHEN DONE CUT KEARNELS FROM COB
6. REMOVE SKIN FROM POBLANO PEPPERS
7. COMBINE ALL INGREDIENTS IN A MIXING BOWL AND THEN TOSS
8. ADD SALT AND LIME TO TASTE.
9. SERVE AT ROOM TEMPERATURE
