A simple side dish to bring to a picnic or pot luck. This one's always a crowd pleaser and rarely do we get to bring any home with us! We find this is best when assembled fresh. If you wish to make ahead of time and assemble later, after the beef cools place in a container. Place the veggies and cheese in a separate container and bring along a bag of Doritos and a bottle of dressing. Warm the beef and assemble the salad.
Ingredients:
1/2 lb ground beef
1 (1 1/2 ounce) package mild taco seasoning (we use mccormicks)
1/4 cup water
1/4 head iceberg lettuce (chopped)
1/2 large tomato (diced)
1/2 cup shredded sharp cheddar cheese
0.5 (12 1/2 ounce) bag doritos, crushed (we use the regular flavor)
kraft catalina dressing
Directions:
1. Brown beef and drain.
2. Add water and Taco Seasoning and simmer for 5 minutes.
3. Remove from heat and cool for 10 minutes.
4. In a large bowl combine beef and remaining ingredients.
5. Toss with Catalina dressing to coat.
