Rosemary Roasted Sweet Potatoes

Ingredients:

Directions:

  1. Preheat oven to 375ºF.
  2. In a roasting pan or large baking dish, combine sweet potatoes, garlic, rosemary and olive oil.
  3. Roast for 45 minutes, mixing occasionally.
  4. Just before serving, add pine nuts, parsley and salt and pepper.
  5. Serve hot.
