Rosemary Roasted Potatoes

Potatoes roasted with rosemary, garlic, lemon juice and olive oil.
Ingredients:
32 oz. potatoes, quartered
2 tablespoons olive oil
1 tablespoons lemon juice
2 tablespoons chopped rosemary
1 clove garlic, minced
1 tsp salt
1 tsp pepper
Directions:
1. Preheat oven to 400 degrees.
2. I'm using small peewee potatoes for this recipe, so I will only halve them. Fingerling potatoes work as well. If using a larger potato, chop so that pieces are about 1-1/2 inch thickness.
3. In a large bowl, toss potatoes with olive oil, lemon juice, rosemary, salt, pepper and minced garlic.
4. Pour mixture into a baking dish, and bake approximately 45 minutes.
