A delicious cake-like bread with the scent of fresh rosemary!
Ingredients:
4 eggs
3/4 cup sugar
2/3 cup extra virgin olive oil
2 tablespoons finely chopped fresh rosemary
1 1/2 cups unbleached all-purpose flour
1 tablespoon baking powder
1/2 teaspoon kosher salt
Directions:
1. Preheat oven to 325.
2. Prepare a 10 inch loaf pan with cooking spray.
3. In electric mixer, whip eggs for 30 seconds with whip attachment.
4. Add the sugar and continue to whip till foamy.
5. Drizzle in olive oil.
6. Using a spatula, gently fold in the rosemary leaves.
7. In a separate bowl, whisk together the flour, baking powder, and salt.
8. With mixer on low, add dry ingredients.
9. Pour into prepared pan.
10. Bake for 45-50 minutes, rotating the pan halfway.
11. Cool in pan.
