great salad with root veggies
Ingredients:
1 cup peeled shredded carrots
1/2 cuppeeled shredded parsnips
1/2 cup peeled shredded turnip
3 green onions trimmed and finely sliced
1 1/2 cups cooked brown rice
1 cup raisins
3/4 cup light mayoniase
1/2 cup vanilla yogurt, 1tbs lemon juice
salt pepper to taste
2 tablespoons toasted sunflower seeds
fresh baby spinach
Directions:
1. mix carrots Parsnips, turnip, green onions rice and raisins in large bowl
2. Mix Mayoniase yogurt and lemon juice together fold into vegetable mixture, season with salt and pepper
3. Sprinkle with nuts and serve on bed of fresh Spinach
