I might be wrong about the amount for oil and vinegar, so add according to your taste. It goes with cold leftover meat.
Ingredients:
6 large boiled potatoes
1 onion
2 tablespoons olive oil
2 tablespoons vinegar
salt
pepper
Directions:
1. Cut the potatoes in bite size pieces.
2. Cut the onion in half and moon slice it.
3. Add the rest of the ingredients.
4. Optional:black olives and parsley leaves.
