ROMAINE RED ONION CARROT SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bateman Estate in Wills Point, Texas in 1985.
Ingredients:
1/2 head romaine lettuce
1 cup mixed field greens
8 baby carrots chopped
4 cucumber slices roughly chopped
2 slices red onion chopped
2 green onions white part only chopped
1/4 cup chopped black olives
1/8 teaspoon kosher salt
1/4 teaspoon finely chopped tarragon
1/4 teaspoon freshly ground black pepper
Directions:
1. Wash lettuce and greens then blot dry.
2. Divide lettuce mixture between two chilled salad plates.
3. Divide remaining ingredients and place over greens.
4. Season with salt, tarragon and pepper then chill until ready to serve.
