Ingredients:
2 1/2 tablespoons butter, melted
1 cup brown sugar, packed
2 eggs, separated
2 1/2 cups rolled oats
2 teaspoons baking powder
1 teaspoon vanilla
1/8 teaspoon salt
Directions:
1. Combine the butter, sugar, egg yolks, rolled oats, baking powder, and vanilla and beat well.
2. Whip the egg whites until they are stiff and fold them and the salt into the other ingredients.
3. Drop by teaspoonfuls, 3 inches apart, onto a nonstick cookie sheet.
4. Bake 375°F for 10 minutes.
