Rolled Bacon Omelet

A recipe I made up while experimenting. I roll it for two reasons one I think it get's a better texture and two I can't do the other way! Oh and it tastes really good with some salsa.
Ingredients:
2 bacon, slices
2 eggs
1 tablespoon milk
red pepper flakes
salt and pepper
cilantro
1/4 cup mexican blend cheese
Directions:
1. In a small pan (with curved edges if possible) fry the bacon until it is crunchy.
2. Take out your bacon (and turn the burner to medium) and and chop it into inch pieces.
3. Pour out some of the bacon grease until the bottom of the pan is only just covered.
4. To save time start this step while your bacon is frying. Beat the eggs together with the milk and salt and pepper to taste in a small bowl.
5. Pour the eggs into the pan.
6. Leave the eggs uncovered for 45 sec and then check if the bottom is nicely golden brown and the top looks solid.
7. If not let it cook longer.
8. Now add the bacon, cilantro and cheese (but not all leave some cilantro and cheese for garnish). Or anything else you feel like putting inches.
9. Roll up the omelet and put it on a large plate sprikle the remaining cheese and some cilantro. Add the red pepper flakes if you want it spicy.
10. Eat!
