Sorry if this is a bad title! I couldn't think of what to call this delicious fresh roll inspired salad. This is basically a spring roll or fresh roll without the casing-actually an incredibly delicious and healthy salad. You must use all fresh ingredients for this, so you might need a good grocery or Asian market nearby. My local Asian market has bags of shredded raw papaya that inspired this salad, but if you don't have any on hand you can substitute extra bean sprouts or lettuce or just leave it out. This salad is great with tofu or your favorite grilled meat.
Ingredients:
1 carrot, julienned
1 green onion, julienned
1/4 cup bean sprouts (1 handful)
1/4 cup fresh raw papaya, julienned (optional)
1/4 cup fresh mint leaves (1 handful)
1/4 cup fresh cilantro (1 handful)
1/4 cup fresh thai basil (1 handful) (optional)
1 tablespoon hoisin sauce
2 teaspoons rice vinegar
favorite hot sauce, such as sriracha (to taste) (optional)
Directions:
1. Mix carrots, green onions, bean sprouts, and papaya (if using) in a small bowl.
2. Coarsely chop mint, cilantro, and basil and add to rest of salad.
3. In a small bowl or cup, mix hoisin sauce and rice vinegar. Pour over salad and serve immediately.
