Rockfish Crab Cakes

Ingredients:
6 oz crab claw meat
1 lb lump crab
1/4 c fresh bread crumbs
2 1/2 t old bay seasoning
1/4 t salt, iodized
1/2 c mayonnaise, light
Directions:
1. ð Combine all ingredients, except the lump crab, in a mixing bowl.
2. ð Add the lump to the mixture and GENTLY fold it in until well combined. BE CAREFUL NOT TO BREAK UP THE LUMPS.
3. ð Mold mixture into 3 ? 3 1/2 oz cakes. Hold very cold.
4. ð Sauté crab cakes in a small amount of clarified butter or cooking oil. Both sides should be a golden brown after cooking cakes for 2-3 minutes, on each side, over medium heat.
5. ð Serve on a 10? plate with some fresh greens, lemon wedge, and homemade tartar sauce.
