Rocket, zucchini, egg, avocado, chicken with a tangy dijjonnaise mayonnaise and lemon dressing. Very high in protein and low in carbs.
Ingredients:
1 cup rocket
1 egg, boiled
1/4 (45g) avocado, cubed
1 (90g) chicken breast, grilled
1 (165g) zucchini, grilled
2 tspn mayonnaise dijonnaise
1 wedge lemon juice
Directions:
1. Boil the egg, shell once cooked
2. Grill Zucchini and chicken
3. cut up avocado into cubes
4. add egg, zucchini, chicken, avocado to rocket
5. dress with lemon juice and dijonnaise and mix salad
