Really lemony scrummy yummy cakes lovely with a cup of tea.
Ingredients:
8 ounces self raising flour, wholewheat
1 pinch salt
4 ounces margarine
4 ounces dried mixed fruit
2 ounces sugar
1 egg
22 1/2 ml milk
1 teaspoon lemon, essence
Directions:
1. Sieve together in a bowl the flour and salt, rub in the margarine. Now stir the fruit into the mixture and then add the lightly beaten egg milk and lemon essence. Stir thoroughly together.
2. Place heaped spoonfuls of the mixture a little way apart on a baking sheet and cook at gas mark 6/400 F for 10-15 minutes.
3. Remove cakes from the baking sheet and cool on a wire rack.
