This Southern Amish dish will delight your family and guests. In addition, you can modify the recipe to fit your own needs. Awesome.
Ingredients:

1-pound sausage or bacon
1 medium sweet onion, chopped
1/2 green pepper diced
6 eggs plus 1/4 cup water lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
1 1/2 cups shredded cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/2 cups shredded swiss cheese

2. 1. In a large skillet, cook sausage or bacon, green pepper and onion until bacon is crisp or the sausage is done then drains. In a bowl, combine the remaining ingredients; stir in bacon or sausage mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
3. 2. Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.
