Ingredients:

Directions:

  1. Preheat oven to 450 degrees.
  2. Quarter and cut zucchini into 1 1/2-inch chunks.
  3. Thinly slice onion.
  4. Ona rimmed baking sheet, toss zucchini and onion with oil, thyme, salt, and pepper.
  5. Roast 30 minutes, tossing half way through. Serve.
