Everything seems to be better when it's roasted....this year when I have Thanksgiving I am serving this as one of my side dishes. I made it the other night; my hubby went wild!!
Ingredients:
3 med. yellow squash - cut up
1 med eggplant - cut up in med. squares
1/2 pound mushrooms
2 cups cut up broccoli flowers
1 med red onion- cut up small
2 med. roma tomatoes - cut up
1 red bell pepper cleaned, cut into strips
garlic salt
pepper
olive oil
Directions:
1. Preheat oven - 400 degrees
2. Wash and cut up all veggies
3. Place on prepared cookie sheet
4. Line cookie sheet with tin foil
5. drizzle with olive oil
6. put cut up veggies on baking sheet
7. Lightly sprnkle with pepper and garlic salt
8. mix (with hands) until all are covered with oil and garlic salt
9. (I always add a little more olive oil and garlic salt just before putting it in oven)
