Roasted Vegetables With Honey and Feta Cheese

You just know that roasted vegetables with honey and feta cheese will be good for you. This easy, healthy recipe makes a colourful dish that is brimming with vitamins.
Ingredients:
2 red peppers, thickly sliced
2 carrots, chopped
1 lb zucchini, quartered diagonally
2 red onions, each cut into 4 chunks
1/2 butternut squash, peeled and cut into chunks
6 tablespoons olive oil, for roasting
4 sprigs thyme
7 ounces feta cheese
4 tablespoons honey
Directions:
1. Preheat the oven to 400°F Place all the vegetables in a large roasting tin with the olive oil.
2. Season, add the thyme, then roast for about 40 minutes.
3. Cut the feta cheese into cubes and add to the vegetables.
4. Gently stir through with the honey.
5. Return to the oven for another 5 minutes before serving.
6. You can serve this either straight from the oven or at room temperature.
